Before the Event Starts

An experienced server arrives 30–45 minutes early and runs through: uniform check, kitchen walkthrough to learn the menu and dietary modifications, bar walkthrough, table setting and placement, glass and flatware polishing, and a captain briefing on the run-of-show. Entry-level servers often skip half of this. The biggest tell: if a server cannot name three menu items and the dietary modifications without prompting, they did not get a real walkthrough.

During Service

Experienced server competencies include plated synchronized service (every table receives every course at the same time, requiring choreography), table reading (knowing when a table needs water, when to clear, when to leave them alone), dietary management (tracking which guests have which restriction without a callout), captain coordination, and graceful recovery from mistakes. The recovery is what separates experienced from entry-level.

Captain vs Server

A captain runs the floor — assigns sections, owns timing with the kitchen, and is the coordinator's point of contact for service. A server executes inside that structure. We do not deploy entry-level servers without a captain present, because the captain is what holds the standard.

Staff Credentials and Coverage

All servers are W-2 employed, food-handler certified, and brought through our internal vetting process. Setup is included in arrival time; breakdown is included in close. Both are part of the staffing plan, not an extra charge.

Questions to Ask a Staffing Vendor

The questions that reveal experience fastest: How many years of plated service does your captain have? What venues has your core team worked in the past 12 months? Are all servers food-handler certified? Do your servers carry workers' comp? Can you produce a COI naming our venue as additional insured by tomorrow? A vendor that stumbles on any of these is signaling that the vetting is either incomplete or theatrical.

The Breakdown Shift

Good servers treat breakdown as part of the service, not a formality to rush through. A proper breakdown: glassware returned to the bar or stacked at the rental area, linens off and folded to venue spec, tables cleared and reset or broken down, venue walkthrough with the coordinator or venue manager, and a handoff check with the captain. Breakdown done right protects the venue deposit and keeps the relationship with the venue strong.

Uniform Standards

Uniform inspection happens before every event. Our standard is pressed black with appropriate footwear, but we match each client's spec — formalwear for galas, branded polo for corporate casual, white glove for plated fine dining. The captain inspects every server before guests arrive. Servers who arrive out of uniform are not deployed and are replaced from standby when available.
